Having easy access to great recipes is key to eating well in my opinion. Dietitians say food is not nutrition unless you eat it. You can be well intentioned, buy healthy kale, spinach and collard greens, but if they sit in the fridge until slimy and then get tossed no benefited.
Nava Atlas is my favorite cookbook author. Greens are so healthy--they contain phytochemicals that protect your vision and every cell in your body. Many are wonderful vegan sources of calcium. Nava makes them taste great in these delicious, easy to cook, creative recipes. I highly recommend this book.

I've been experimenting with Kale chopped small in my salads, sautéed and added to soup and pasta and blended into smoothies. I use Spinach the same way. So far so good but I'd love to have more creative ideas on how to use these greens. I'll check out the book. Thanks!

I've grown collard greens in my garden for the past two years. Saute garlic and onion in olive oil, then add chopped greens. Saute for about three minutes or until the greens have softened. I serve with sweet potato chunks.

If you're looking for ways to cook greens and incorporate more of them into your diet, you should read Deborah Madison's cookbooks. Her "Vegetarian Cooking for Everyone" is a classic and "Vegetarian Suppers" includes a great recipe for mashed potatoes topped with greens (amazingly delicious!).

I love bok choy grilled. I cut it in half lengthwise, brush it with olive oil, and grill it. And, I make a green smoothie every day, with bananas, spinach, kale, and parsley, then add a dash of vanilla extract and agave for flavor. Wonderful!
