Linda Spreeman Random Recipe for Fall #4

In the spirit of the Devon Horse Show - thought it would be fun to share a recipe for authentic Devon Fudge!

2 oz unsweetened chocolate
2/3 c evaporated milk
2 c sugar
dash of salt
1 tsp light Karo syrup
2 tbsp. butter
1 tsp vanilla

Combine chocolate, milk, sugar salt and Karo and cook over medium heat stirring constantly until mixture comes to a rolling boil.  Then cook, stirring occasionally, over low heat until candy thermometer reads 236 degrees.  It takes approximately 30 mins for 1 pound.  Take off heat and add butter and vanilla and place plan in cold water.  Beat until fudge is fairly thick and creamy.  Pour quickly into a greased 8x8 inch plan and cool.

Recipe was found in newspaper - circa 1982 - and published by the Devon Fair Candy Committee.
